  • 1 Small head endive
  • 1 Small head Cos lettuce
  • 1 Cucumber
  • 2 Large tomatoes
  • 175 grams Stoned black olives
  • 100 grams Feta cheese (crumbled)
  • 2 Spring onions (trimmed & chopped)
  • 2 tablespoons Capers
  • For the Dressing
  • 100 milliliters Olive or vegetable oil
  • 1 teaspoon Dried oregano
  • pinch of Salt

Instructions
  1. Preparing the Salad

    Wash the endive and lettuce thoroughly, drain well and dry gently with kitchen paper towel. Shred the leaves and put them in a large salad bowl.

  2. Making the Dressing

    Wipe the cucumber, pare off alternating strips of the skin and slice the flesh thinly. Cut the tomatoes into small wedges.  Add the cucumber slices, tomato wedges, olives, cheese, anchovy fillets, spring onions and capers to the salad bowl

    Preparing the cucumber : Peel off strips of skin with a sharp knife, then slice the cucumber thinly.

  3. Bringing It All Together

    Assembling the salad : Add all the ingredients to the bowl before tossing with the dressing.

    Mix all the ingredients for the dressing, pour over the salad and toss together until well mixed.

    • For a creamier dressing, add 1/4 cup of plain Greek yogurt to the dressing mixture.
