Description

Cut the meat into 4 cm chunks and coat them with the flour. Then heat the oil in a flame proof saucepan and brown the lamb a pieces at a time, removing the pieces from the saucepan as they brown.

Return the meat to the pan and stir in the water, onions, garlic, salt, peppers and thyme. Bring to the boil, reduce the heat, then cover and simmer for 2 hours. Skin the tomatoes and cut them into wedges and seed the green peppers and trim the aubergune cut them both into chunks.

Add the vegtables to the lamb and cook for a further 30 minutes, stirring occasionally. Cook the rice in boiling salted water; drain and keep it hot.

When both meat and vegtables are tender, remove from the heat. Spread out the rice on a heated serving dish and spoon the stew over the top
