The skin is a delight. There are four things you can do to make it crispy: First, dry the skin before adding seasoning. Next, put the chicken in a skillet with the skin facing down over medium-high heat. When you heat up your pan, it may splash some grease and make smoke, like when you cook bacon. If you don't like it, reduce the heat, cook longer, and slowly melt the fat from the skin. Third, keep an eye on the skin's edges. When the edges turn brown, put the pan in the hot oven. Fourth, turn the thighs over for the final few minutes. Hot air will flow over the skin, making it crispy.

  • 1 teaspoon salt

  1. Heat the oven to 500 degrees. At the same time, put the chicken thighs, with the skin facing up, on a chopping board. Cover the chicken with plastic wrap, then use a hammer or heavy skillet to flatten it to about 3/4 inch thick. Dry the chicken skin with a paper towel. Put salt, paprika and pepper over the chicken evenly.

  2. Warm up a big metal frying pan on medium-high heat. Put oil in the pan and move it around to cover the entire surface. Put the chicken in the pan, skin side down, and cook for 8 minutes or until the edges start to turn golden. Put the hot pan in the oven. Cook at 500 degrees for 7 minutes. Flip the chicken thighs and bake for 4 more minutes until they are fully cooked.
