If you know about Moroccan food, you know beans are important to us. This cheap, easy-to-find ingredient, which is usually seen as ordinary, becomes something special when cooked with Moroccan herbs and spices. I grew up eating different kinds of Loubia made by my dad, grandma, and aunts. One of my dad's favorite ways to cook them was to cook them slowly in a tagine with cow's feet. Today we are not using any meat, but this dish still has a lot of protein and tastes delicious. It's a great meal to eat with some crusty bread.
Warm up the oil in a big pot over medium heat. Put onions in the pan and cook them until they start to turn clear. Add garlic and cook until it smells good, then add grated tomatoes and spices. Cook on high heat for a few minutes until the flavors start to develop.
Put in some herbs, beans, tomato paste, and water. Put the parsley, cilantro, beans, tomato paste, and water in a pot. Bring it to a boil, then reduce the heat and cover it to let it simmer. Stew for 30 minutes, or until the sauce has thickened.
Try the food and give it to others. Taste it to see if it needs more seasoning. Serve with bread and some fresh parsley and cilantro on top.
