Egg salad is a common salad composed typically fresh raw onions, peppers, celery, and/or other vegetables, tossed in a vinaigrette or vinegar and characteristically sweetened with sugar. It can also be prepared as a pickled dish.  Bean salad is a popular choice for home canning. Salads prepared with this method should be used within a year for best quality.

  1. Soak celery in water: Place the celery in a small bowl. This will help the celery. Let sit while you prepare the rest of the salad.

  1. Now cut the eggs into large chunks; place them in a large salad bowl with the celery and green pepper. 

  1. Add the dressing to the bowl and toss together  gently until well mixed.

  1. Now you can serve spooned on to lettuce; garnish with parsley.
