Description

To prepare  bean salad, the cooked and drained white beans form the hearty base of the dish, providing protein and substance. The tomatoes contribute sweetness and juiciness, enhancing the salad's overall freshness. Fresh parsley adds a burst of herbaceous flavor and a touch of brightness to the salad, elevating its taste profile.

The salad is dressed simply with olive oil and lemon juice, which not only add a luscious richness but also enhance the flavors of the ingredients without overpowering them. A pinch of salt and black pepper season the salad, harmonizing the flavors and bringing out their natural goodness.

  • 225 g Dried haricot beans (Soaked overnight)
  • 1/2 pt Chicken stock
  • 2 bay leaf
  • 75 g Stoned black olives (halved)
  • 2 Larg tomatoes (Chopped)
  • For the Dressing
  • 4 tbsp Olive or vegetable oil
  • 4 tbsp Lemon juice
  • 3 tbsp Fresh mint (Chopped)
  • 1 tbsp Dried mint
  • 2 tsp Salt
  • 2 tsp Sugar
  • pinch White pepper
  • For the Garnish
  • Mint leaves
Instructions
  1. Step 1

    Put the beans in a large saucepan with the stock and bay leaf and bring to boil. Cover and simmer for 1 hour, stirring occasionally, until tender but still firm. Drain well and discard bay leafs.

  2. Step 2

    Put the beans, olives and tomatoes in a large salad bowl. Mix all the ingredients for the dressing, pour over the salad and toss together until well mixed. Leave to cool. Cover and chill thoroughly.

  3. Step 3

    To serve, garnish the salad with mint leaves.
